Molecular characterization was performed in three broad disciplines: particle size, zeta potential, and surface chemistry. Particle size is divided into several fractions, as shown in Figure 4, and is used as a percentage of the mean diameter of the particle. The Zeta Potential is a parameter that combines the surface, hydrodynamic properties, and size. At low Zeta potential particles may become stuck into the hydrophobic and hydrophilic regions. When a certain number of disulfide bonds are formed, particles (or cations) are agglomerated.
